Muy buenas news, Brisbane! Birria Boy, the Mexican pop-up that first opened its doors in October of last year, is officially here to stay!
Although initially conceived as a pop-up, it has since become a genuine casual dining favourite and a staple of Woolloongabba, and thanks to its loyal following, the AW Hospitality team — who are also behind C’est Bon, so you know you can trust their savoir faire — have decided to make it a permanent addition to the foodie landscape.
As head chef and owner, Andy Ashby put it, “From the moment we opened, the response was immediate. We built Birria Boy as a pop-up to test the idea, but the support from the community made the decision easy. People kept coming back, bringing their friends, really connecting with what we’re doing here. Brisbane, you asked for it, so here we are.”
Birria Boy channels the street-style energy of Jalisco, Mexico, through a bold menu built on fire, spice, and authentic technique. It’s casual and approachable, a little bit loud, just like the country that inspires it.

At the heart of the menu is the traditional birria taco: slow-cooked marinated goat or beef, crisped up and folded into fresh masa tortillas, served with a rich, deeply reduced consommé for dipping.
The drinks list leans into agave in a big way with a handpicked collection of tequilas, mezcals and agave spirits sourced from small growers across Mexico, so you know you’re getting the best drinks to say “salud” with!
Built for the kind of dining that brings people together, whether that’s a pre-show bite before The Princess Theatre or a late night of tacos and margaritas with friends, Birria Boy’s attention to authenticity and detail is what made it impossible for us to let it go.

Practical information
Birria Boy is open Thursday to Monday, with two services on Friday, Saturday, and Sunday: from 11:30am to 2:30pm and from 5pm to 10pm. Monday and Thursday are only open for dinner, from 5pm to 10pm.
