All roads lead to Rome with Eterna’s newest Chef’s Table culinary experience.
Hailing from Naples, chef Francesco Vitagliano now finds himself heading up the kitchen at Fortitude Valley’s late-night Italian restaurant, Eterna, where he’s devised a special two-course dining experience complete with tableside flambé. How exciting!
Having worked in many of Rome’s top restaurants and osterias before moving to Australia, Francesco has mastered the quintessential Italian flavours and developed a number of specialty dishes that now utilise the best of Australian seafood.
However, he’s not just content on cooking up a storm in the kitchen. Francesco also wants to share the experience, the theatrics and his culinary influences with diners. This chef’s table, in other words, is his passion project.
He says, ”This is a great experience for not only the guests but for myself, as it allows me to interact with them and share my inspiration behind these particular signature dishes, origins and cooking techniques.”
The two-course Chef’s Table experience will begin with Mooloolaba prawns served tartare-style with baby Roma tomatoes, burrata cheese, a citrus emulsion, pistachio and a striking squid ink tuille.
Although this first plate sounds amazing, the main star of the show will be the second dish: a wild-caught Northern Territory tropical rock lobster that will be flambéd tableside before being served alongside house-made spaghetti in a sumptuous seafood bisque that has been on the cooker for 24 hours.
Eterna’s bar team are also getting in on the experience with a suggested wine and cocktail pairing for both dishes. And while you’ll need to fork out a little extra to include for example the Borgoletto Soave or the Margarita Fumé in your experience, you’d only be shortchanging yourself by ordering any other drink.
Eterna’s Chef’s Table experience is only available from Tuesday to Thursday and limited to a select number of guests per day. Booking is highly recommended.
